‎First printing of this landmark paper (published in full the year after in ""MÃmoires de la Societe des Sciences, de l'Agriculture et des arts de Lille"" and in ""Annales de Chimie et de Physique"" (1858)), marking Pasteur's commencement of the study of fermentation. The offered paper was read in extract on the SÃance du Lundi 30 Novembre). Here Pasteur found that lactic acid fermentation is due to small corpuscles of yeast cells, and thus carried out by living bacteria. He hereby ended the long controversy with Liebig, who insisted that fermentation was a purrely chemical phenomenon that did not involve living organisms. THE MEMOIR IS CONSIDERED THE FOUNDING PAPER OF MICROBIOLOGY.""Pateur's researches on fermentationm led him to the discovery of the bacteria and yeasts and hence to the germ theory of disease: FROM THIS ALL MODERN BACTERIOLOGY AND IMMUNIOLOGY DEVELOPED.""(Garrison & Morton, note to 2472).""There (at the University of Lille) he became interested in the problem of France's importent wine industry. Wine and beer often went sour as they aged and millions of francs were lost as a result. Wasn't there some chemical to prevent this ? In 1856 a Lille industrialist turned to the famous young chemist and put the problem to him. Pasteur agreed to tackle the matter and turned to the microscope. He found almost at once that when the wine and beer aged properly, the liquid contains little speherical globules of yeast cells. When wine and beer turn sour, the yeast cells are elongated. Clearly there are two types of yeast, one of which produces alcohol (good) and the other lactic acid (bad). Pasteur's milestone discovery of biological enantioselectivity began the process that in the long run established the fundamental importance of molecular chirality in biology.""In 1858 he made an importent discovery in connexion with the fermentation of tartaric acid. he observed, if incompletely, the characters of the organisms which causes the fermentation in ammonium tartrate, and transferring a trace of the organism to a solution of racemate of ammonia, which of course is optically inactive, he found that the fermenting solution gradually acquired a left rotatory power until finally the right-handed salt disappeared and laevotartaric acid was left untouched. Between 1855 and 1865 a widespread epidemic among silk worms called pebrine alarmed the south of France, so much so that finally, in 1865, it drew national attention. Dumas was president in 1859 and Wurtz secretary. This society became the centre of interest in the atomic theory and organic chemistry in France...". L'on sait que PASTEUR fera de cette découverte un des caractères fondamentaux de la vie. L'année 1861 CONTIENT LA PREMIERE COMMUNICATION PUBLIQUE DE PASTEUR SUR L'IMPOSSIBILITE DE LA GENERATION SPONTANEE : "SURLES CORPUSCULES ORGANISES QUI EXISTENT DANS L'ATMOSPHERE. EXAMEN DE LA DOCTRINE DES GENERATIONS SPONTANEES" ---- "In May 1861, at a meeting of the Société chimique de Paris, PASTEUR presented the major results of his work on spontaneous generation... His views on molecular asymmetry and optical activity, as they stood at the end of his active research on the problem, are admirably summarized in "Recherches sur la dissymétrie moléculaire des produits organiques naturels" in Leçons de chimie professées en 1860 (Paris 1861)...". ‎First printing, in the extremely scarce off-print (separately paginated), of this landmark paper which founded scientific bacteriology, immunology and microbiology in general. The work constitutes ""[t]he first demonstration of the connection between a specific fermentation and the activity of a specific microorganism ... the beginning of bacteriology as a modern science"" (Garrison & Morton). ""In this epochal paper [Pasteur] first published his research on lactic fermentatiom [...] A great milestone in biochemistry"" (Neville, vol. II, p. 274).Until the publication of the present paper, fermentation had been described in all the textbooks as a chemical process, but Pasteur had now shown it to be caused, in the case of lactic acid fermentation, by a living organism. Skeptical also of the chemical theory of alcoholic fermentation, he went on to disprove the theory by demonstrating that yeast is the living agent of the process. Furthermore, he established that specific microorganisms are responsible for specific biological processes and, by inference, that specific germs may be the agents of specific diseases. Pasteur thus laid the foundation for the germ theory of disease.This paper ""contains most of the central theoretical and methodological features of his biological theory of fermentation, in particular the concept of fermentation as a product of the growth of yeast, the idea that air is source of microscopic yeasts and other micro-organisms, and the notion of specificity, in which each fermentation could be traced to a specific micro-organism. Pasteur was able to isolate, observe and propagate the yeast responsible for lactic fermentation, and to demonstrate that its activity was dependent on its environment. Pasteur's concept of fermentation as a biological process challenged the chemical theory of fermentation put forth by Liebig, which Pasteur was able to disprove with his experiments on alcoholic and acetic fermentation."" (Norman 1653).The consequences of Pasteur's discovery was wide reaching and did not only revolutionize the field of medicine: ""French winemakers, troubled by the souring of wine, especially in exporting, presented their problem to Pasteur. He found that wine diseases could be controlled by heating the liquid for a definite time at a certain temperature."" (Milestones of Science). He also helped the silk industry by pointing out a silkworn decease" the French beer brewers were helped by Pasteur's knowledge on fermentation in their competition with the German brewers.The paper was first published in Annales de Chimie et de Physique, Third Series, Vol. 52. Almost simultaneously in the Annales de Chimie et de Physique and the MÃmoires de la Società des Sciences, De l'Agriculture et des Arts de Lille and Comptes Rendus de l'AcadÃmie des Sciences.Norman 1653 Garrison-Morton 2472 Dibner, Heralds of Science, 198 One Hundred Books Famous in Science 82 (none of them referring to the offprint, merely the periodical-issues).‎
