William Ukers published his massive, 1149 page, 54 chapter opus on tea in 1935. He spent twenty-five years collecting material and visiting the tea-growing regions of Asia before delving into research work in the principal libraries, museums and laboratories of America and Europe. Only 600 copies of Ukers' work were printed. One of the most extensive works ever written on Tea, heavily illustrated with photographs and reproductions. Today the work is still a foundational work in culinary history and is often referenced.
