Nouvelle édition (le titre indique "onzième") de cet ouvrage rédigé pour les étudiants de médecine et de pharmacie et qui fit autorité pendant plus de cent ans. Ce Cours de Chymie de Lemery (1645-1715), chimiste et apothicaire, a en effet permis à la tradition française de sortir son héritage "paracelsien-helmontien" de s'inscrire dans le courant principal de la philosophie naturelle cartésienne contemporaine.
