First issue of the first seperate edition, extremely rare, of the first great publication on oenology by Chaptal, the Ôfather of the chaptalisation' (the action of adding sugar to grape juice before its fermentation, an entirely legal operation). That same year it was published by the same publisher and printer as part of the work ÇTraité théorique et pratique sur la culture de la vigne, avec l'art de faire du vin, les eaux-de-vie, esprit-de-vin, vinaigres simples et composésÉ. This book covers all the steps of wine production, with consideration of the influence of the climate on wines, information on fermentation, storage and treatment, a discussion of the maladies of wine, uses and characteristics of the different wines and their ananlysis.
